Disney Recipe: Make a delicious holiday cocktail with Jaleo!

There is nothing like the magic and whim of a Disney cocktail. Designed for the 2021 winter beverage menu at Jaleo in Disney Springs, this sherry-based cocktail is the perfect balance not only of “novelty and acidity,” but also “fruity and yeast”.. WineMag.com shared the recipe on how to make this delicious holiday cocktail.

Sherry Chamber # 1

Serving Size: 2 cups

Cup: Cup

Ingredients

  • 1 oz. amontillat Sherry
  • ¾ oz. Fino Jerez
  • 4 glasses of Peychaud’s Bitters
  • 1 oz. Beer and pear syrup (below the recipe)

Recipe:

FOR BEER AND PEAR SOAK:

  1. Cut two ripe pears into pieces. In a food processor, grind together with ¼ cup of wheat beer.
  2. Transfer to a saucepan and combine with 2¾ additional cups of wheat beer and 1½ cups of brown sugar.
  3. Cook, stirring, over high heat to dissolve sugar. Continue cooking for 10 minutes, then lower and simmer for 20 minutes.
  4. Pour the mixture through a fine-mesh strainer lined with a coffee filter, letting the mixture drip slowly.
  5. Transfer to container with lid. The mixture can be refrigerated for up to a week.

TO SERVE:

  1. Combine all ingredients in a mixing glass with ice. Stir to cool.
  2. Strain into a refrigerated coupe glass without garnish.
