When Luis Madrigal began his trip to Disney making omelettes at the Mission Tortilla Factory in Disney California Adventure Park 12 years ago, he never imagined that he would become a chef. But after working at Redd Rockett’s Pizza Port, he discovered his passion for food and set out on his journey.
“The reason I became a chef is because I had someone who took me under his wing and taught me how to cook. [and] the science behind it, “Luis said.” You’re in a lab gathering these ingredients. “
So, for the Disney Festival of Holidays at Disney California Adventure Park, Luis jumped into the “lab” with the Festivals team and flipped through his favorite dish: macaroni and cheese! “Think about it, what else can we add to mac with cheese to make it different? How can we keep pushing the envelope? ” Inspired by the taste of carnitas, the team changed the typical cheddar for cottage cheese and Oaxaca cheese, and even crowned the Esquites Carnitas Mac & Cheese with puffed rice seasoned to taste. Spanish rice, a typical side of the original dish.
“[It was special] combining these flavors and being able to contribute something that I like to cook and what I grew up knowing, ”said Luis, who added that as a child he liked food more than cooking. Inspired by dishes that remind her of home, such as roast beef and beer, she hopes that guests will also return to the flavors of home when they taste their dishes.
“What more inspiration do you need than someone who loves what you do and changes someone’s feelings with just a spoon?”
When Luis thinks about his childhood and what it means to be a chef at the Disneyland Resort for him and his family, he thinks of his father. “My dad always makes me feel a certain way … because he tells me stories from when I was a kid. I used to watch Disney Channel on a neighbor’s TV in Mexico and I never imagined I’d ever visit park, “Luis explained. “So why would you say, ‘I never thought I could visit him, and now I have a son who works at Disneyland and is a chef?’ Life is full of surprises. ‘
The Disney Festival of Holidays at Disney California Adventure Park will run through January 9th.
