Look like a master baker with this spectacular Disney recipe

This masterpiece has a few steps to follow, but it certainly has this shock factor and will “surprise” your family and friends when you take it out! So let’s roll up our sleeves, throw on an apron, and get in the oven!

Ingredients

To paste:

  • 2 1/2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup cake flour, sieved
  • 1 large egg white

For the cake:

  • 3 large, separate eggs
  • 1/4 cup granulated sugar
  • 2 extra tablespoons granulated sugar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 1/2 tablespoons whole milk
  • 2/3 cup cake flour, sieve
  • Blue food coloring

To stuff:

  • 1 1/4 cup whipped cream
  • 2 tablespoons gelatin powder
  • 2 tablespoons powdered sugar
  • 1/4 cup cold water
  • 4 teaspoons vanilla extract
  • 2 teaspoons whipping cream

Indications

Step 1: Make the pasta

  1. Download and print the D23 Mickey Snowflake template or create your own design. Place the template in a 9 × 14-inch pan and cover with a piece of parchment paper.
  2. Using a spatula or wooden spoon, mix in the butter and sugar until smooth.
  3. Add the flour and mix until incorporated, then add the egg white and continue mixing until smooth.
  4. Transfer the pasta to a backpack or sandwich bag. Make a small hole in the corner to create a thin tip.
  5. Place the design on the parchment, following the lines on the template. As shown in the template, you only need to channel the design to about 2/3 of the pan. The rest will not be visible once shot.
  6. Place the pan in the freezer to solidify while you prepare the rest of the dough.

Step 2: Make the cake

  1. Preheat oven to 350 ° F.
  2. Place the egg yolks in a medium bowl. Add 1/4 cup sugar and beat until dissolved. The buds should have lightened in color. Slowly add the vegetable oil, stirring constantly, until incorporated. Add the milk, salt and vanilla extract and mix until combined. Add a few drops of blue food coloring and mix until the desired color is reached.
  3. Slowly add the sifted cake flour and fold until incorporated.
  4. In a clean bowl, add the egg whites and beat until fluffy. Add the remaining 2 tablespoons of sugar and beat on high speed until stiff peaks form.
  5. Stir in half of the egg whites into the dough until lightly browned, then add in the rest until just done. Don’t mix too much.
  6. Remove the pan from the freezer, discard the design template under the parchment paper, and pour the sponge dough over the frozen design. Use a spatula to spread the dough evenly. Hit the pan on the counter a few times to remove air bubbles.
  7. Bake for about 10 minutes, or until the top comes out again when lightly pressed.
  8. Remove from the oven and pass a knife through the edges of the pan to gently separate the cake. Place a kitchen towel on top of the cake and cover with a baking tray or cutting board. With baking gloves, invert the pan and board so that the cake is removed from the pan. Carefully remove the parchment paper, revealing the design.
  9. Sprinkle a clean tea towel with powdered sugar and place on top of the cake. Turn the cake over once more, so that the design is now down, with a kitchen cloth underneath.
  10. Starting on the side of the cake without the design, carefully roll the hot cake on the towel. Doing so while the cake is still hot will allow it to cool in this position and limit any cracks that may form.
  11. Let the rolled cake cool to room temperature for about 1 hour, or until completely cool to the touch.

Step 3: Make the filling

  1. Place the water in a microwave-safe bowl and sprinkle with powdered gelatin. Let it bloom for 5 minutes.
  2. Put the gelatin and water mixture in the microwave for 5 seconds, then stir until the gelatin melts completely. Add 1 teaspoon of cream and stir to combine.
  3. In a bowl, whisk your cream until smooth. Add powdered sugar and vanilla.
  4. Turn the blender to low and slowly add the gelatin. Mix until the cream begins to form stiff peaks.

Step 4: Assemble the roll cake

  1. Carefully unroll the cooled sponge cake. Don’t worry if cracks appear, they should be covered with the filling once assembled.
  2. Spread a uniform layer of whipped cream stabilized on the cake, making sure to spread it to the brim.
  3. Rewind the cake carefully. Wrap the roll in plastic wrap and let it cool for at least 30 minutes to harden.
  4. When ready to serve, cut off each end of the roll to create a neat edge. Serve cold and enjoy!
